Eating Processed Meat Causes Cancer! Or Not?

I don’t eat processed meat. I prefer preparing my own meal at home, usually, some bone broth, scrambled eggs, pork belly, steak or ground beef. However one of the reasons why I generally avoid processed meat is the hearsay that it causes cancer.

Currently, I’m in the process of reading the Lies My Doctor Told Me, a book by Dr. Ken Berry, and one of the thing that struck me was the information that celery and beet greens contain hundreds of times more nitrate and nitrite than the average hot dog and that more than 90 % of the nitrates the average person consumes comes from vegetables.

This sounds pretty scary and I just wonder why nobody warned us about this as well and why we weren’t told to strictly limit veggies rather than processed meat. Maybe it’s not interesting enough for IARC (International Agency for Research on Cancer) which announced that processed meats were a probable cause of cancer.

Anyway, Dr. Berry did a great job of debunking some of the most offending lies and I highly recommend his book.
